Chicken Cacciatore

Servings: 3-4
 
Ingredients:
2 tablespoons butter or margarine
1 medium onion, sliced, separated in rings
1 medium garlic clove, minced
1 teaspoon dried leaf oregano
1(3 pound) chicken, broiler-fryer chicken cut up, not using the backs
1(16 oz) jar bottled spaghetti sauce
hot cooked spaghetti
grated Parmesan cheese
 
  1. In a baking 12" x 7" baking dish combine the butter or margarine, onion, garlic and oregano.
  2. Cover with vented plastic wrap and microwave on HIGH for 5:00 or until tender, stirring once.
  3. Turn chicken pieces over in butter or margarine mixture to coat.
  4. Arrange chicken skin side down with meaty pieces toward outside of dish.
  5. Spoon spaghetti sauce over chicken, coating completely.
  6. Cover with vented plastic wrap and microwave on HIGH for 12:00.
  7. Turn chicken skin side up.
  8. Spoon sauce over chicken.
  9. Cover with vented plastic wrap and microwave on HIGH for 12:00-14:00 or until tender.
10. Let stand, covered, 5:00.
11. Serve chicken and sauce over spaghetti.
12. Sprinkle with cheese.
