Curried Tuna Pilaf

Ingredients:
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper
1 1/2 cup how water
2 teaspoons no-salt-added chicken bouillon granules
1 teaspoon curry powder
1(6 1/2 oz) can no-salt-added water-pack tuna, drained, broken in large pieces
2/3 cup uncooked long-coking rice
2 cups chopped apple
1/4 cup raisins
 
1. In a deep, 2 quart casserole dish, combine carrot, celery, onion, and green pepper.
2. Cover and microwave on HIGH for 4:00-5:00 or until tender, stirring once.
3. Stir in hot water, bouillon granules and curry powder.
4. Cover and microwave on HIGH for 3:00-4:00 or until boiling.
5. Stir in tuna, rice, apple and raisins.
6. Cover and microwave on MEDIUM LOW for 28:00-30:00 or until rice is tendet, stirring twice.
7. Let stand, covered, 5:00.
8. Fluff with a fork.
