Tuna Vegetable Treats

Ingredients:
1/2 cup ricotta cheese
2 teaspoons skim milk
2 tablespoons snipped parslet
2 teaspoons snipped chives
2 teaspoons lemon juice
1 teaspoon shredded lemon peel
1 (6 1/2 oz) can no-salt-add water-packed tuna, drained, flaked
12 slices zucchini, cut in 1/2 inch bias-cut slices
12 triangles red or yellow pepper, cut in 1 1/2 inch triangles

1. In a medium bowl, combine ricotta cheese, milk, parsley, chives, lemon juice and lemon peel.
2. Mix well.
3. Stir in tuna.
4. Arrange zucchini slices and red or yellow pepper triangles on a 12 inch microwavable plate.
5. Spoon about 2 teaspoons tuna mixture atop each vegetable piece.
6. Sprinkle with paprika.
7. Microwave on MEDIUM LOW for 4:00-5:00 or until tina mixture in just warm, giving plate a half turn once.
