Pepper Saute

Ingredients:
2 tablespoons olive oil
1 medium red pepper, cut in strips
1 medium green pepper, cut in strips
1 medium onion, sliced, separated in rings
1 teaspoon dried leaf oregano
1 teaspoon dried lead basil
2 medium oranges, sectioned
1/4 cup snipped parsley
1/4 cup toasted walnut halves
 
1. In a 2 quart casserole dish, combine oil red pepper, green pepper, onion, oregano and basil, tossing to mix.
2. Cover and microwave on HIGH for 6:00-7:00 or until the vegetable are tender.
3. Add oranges, parsley and walnuts.
4. Let stand, covered for 2:00.
5. Drain.
6. Toss gently to mix.
