Snowfall Frosting

Servings: 2 cups
 
NOTE: Be careful as this frosting will keep no longer than one day.
 
Ingredients:
1/2 cup sugar
3 tablespoons water
1/8 teaspoon cream of tartar
1/2 teaspoon vanilla extract
1 egg white
 
1. In a 2 cup measuring cup, combine the sugar, water and cream of tartar.
2. Microwave on HIGH for 1:00-1:15 or until mixture boils and sugar dissolves, stirring 3 times.
3. With an electric mixer on high speed, slowly add hot syrup and vanilla to egg whites in a 1-1/2 quart bowl.
4. Continue beating at high speed until stiff peaks form, 3-5 minutes.
