Ingredients:
4(5 oz) grouper fillets, 1/2 inch thick
2 tablespoons orange juice
2 teaspoons lime juice
2 tablespoons butter or margarine
2 kiwi, peeled, sliced
12 segments drained mandarin orange segments
1/4 cup orange marmalade
4 teaspoons white port wine
1/8 teaspoon ground mace
1. Place fish fillets flat in a 12" x 7" baking dish.
2. Drizzle with orange juice, then lime juice.
3. Dot with butter or margarine.
4. Cover with vented plastic wrap and microwave on HIGH for 5:00-6:00 or until center of fish flakes when tested with a fork.
5. Give dish a half turn once during the cooking time.
6. Garnish with kiwi slices and mandarin oranges.
7. In a small bowl, combine marmalade, port wine and mace.
8. Mix well.
9. Spoon over fruit.
10. Microwave, uncovered on MEDIUM LOW for 2:00-2:30 or until warmed through.
