Stuffed Oysters

Servings: 4

Ingredients:
Cheese Stuffing or Spinach Stuffing
8 fresh shucked oysters, drained
2 tablespoons butter or margarine
1 teaspoon lemon juice

1. Prepare stuffing and set aside.
2. Pat oysters dry on a paper towel.
3. Pierce with a large fork.
4. Place butter or margarine in a custard cup.
5. Microwave on HIGH for 0:45 or until melted.
6. Stir in lemon juice.
7. Dip oysters in butter mixture.
8. Place oysters in 8 shells.
9. Arrange shells in a circle in a 12" round platter baking dish.
10. Top oysters with stuffing.
11. Garnish as directed in appropriate stuffing recipe.
12. Microwave oysters on MEDIUM for 4:00-5:00 or until heated through and oysters are tender, giving the dish a half turn once.
13. Let spinach stuffed appetizers stand 1:00 before serving.
