Raspberry Tarragon Beets

Ingredients:
2 tablespoons butter or margarine
1/4 cup chopped green onions
1/4 cup raspberry vinegar
1 teaspoon dried leaf tarragon
6 servings hot cooked beets, drained
 
1. In a 2 cup glass  measuring cup, combine butter or margarine and green onion.
2. Microwave on HIGH for 3:00-4:00 or until tender.
3. Stir in raspberry vinegar and tarragon.
4. Mix well.
5. Pour over hot cooked beets, tossing to coat.
