Homemade Herb Vinegar

Servings: 5 cups
 
Ingredients:
1 (750 ml) bottle of Sauvignon Blanc
2 cups white vinegar
1/2 cup fresh herb leaves, lightly packed(thyme, tarragon, oregano, dill)
2 cloves garlic, halved
4 whole allspice
herb sprigs
 
1. In a deep, 2 quart casserole dish, combine wine, vinegar, herb leaves, garlic and allspice.
2. Microwave, uncovered, on HIGH for 10:00 or until boiling.
3. Strain into hot clean jars.
4. Refrigerate until cold.
5. Add an herb sprig in each for garnish.
6. Seal with corks or screw caps.
7. Store in the refrigerator.
8. Use to make Vegetable Vinaigrette or to flavor vegetables or salad dressings.
