Lemon Cake Filling

Servings: 2 cups
 
Ingredients:
1 cup sugar
2 tablespoons cornstarch
1 teaspoon shredded lemon peel
1/2 cup water
3 tablespoons lemon juice
 
1. In a 4-cup measuring cup, combine the sugar, cornstarch and lemon peel.
2. Stir in water.
3. Microwave on HIGH for 3:30-4:30 or until mixture thickens and boils, stirring 3 times.
4. Stir in lemon juice.
5. Mix well.
6. Cover surface of hot fillinf with plastic wrap or waxed paper.
7. Cool at room temperature.
8. Use as a filling for cake or as a lemon sauce on cake slices.
