Salmon Stuffed Avocados

Ingredients:
4 avocados, peeled, seeded, halved
2 tablespoons lemon juice
1(7.75 oz) can salmon, drained, flaked, bones removed
1 cup(4 oz) shredded Cheddar cheese
1/2 cup chopped tomato
1/2 cup chopped cucumber
2 tablespoons snipped parsley
4 teaspoons snipped chives
2 tablespoons capers
1/4 teaspoon dried dillweed
 
1. Coat avocado halves with lemon juice.
2. Place cut side up in a 12" x 7" baking dish.
3. In medium bowl, combine salmon, cheese, tomatoes, cucumber, parsley, chives, capers and dillweed.
4. Toss to combine.
5. Lightly pack salmon mixture in 1/4 cup measure.
6. Invert atop avocado half.
7. Repeat with remaining salmon stuffing and avocados.
8. Cover with vented plastic and microwave on HIGH for 3:00-4:00 or until just warm, giving dish a half turn once.
