Servings: 1 2/3 cups
Ingredients:
1 cup water
1/2 cup dry white wine
1/4 cup chopped carrot
1/4 cup chopped celery
1/4 cup chopped onion
3 sprigs parsley
2 lemon slices
1 small bay leaf
8 peppercorns
1/2 teaspoon salt
1. In a deep 3 or 4 quart casserole dish, combine water, wine, carrot, celery, onion, parsley, lemon, bat leaf, peppercorns and salt.
2. Cover and microwave on HIGH for 8:00-10:00 or until boiling.
3. Use poaching liquid in recipes for Poached Fish Fillets, Poached Whole Trout and Poached Scallops.
