Honey Corn Relish

Servings: 4 cups
 
Ingredients:
2 tablespoons sugar
2 teaspoons cornstarch
1 teaspoon dry mustard
1/2 teaspoon celery seed
1/2 teaspoon turmeric
1/2 cup vinegar
1/4 cup water
1/4 cup honey
3 cups frozen whole kernel corn
1 1/3 cups chopped red pepper
2/3 cup chopped celery
2/3 cup chopped onion
 
1. In a deep, 2 quart casserole dish, combine sugar, cornstrach, mustard, celery seed and turmeric.
2. Mix well.
3. Stir in vinegar, water and honey.
4. Stir in frozen corn, red pepper, celery and onion.
5. Mix well.
6. Microwave on HIGH for 12:00 or until vegetables are crisp-tender, stirring twice.
7. Cool.
8. Store in covered container in refrigerator up to one month.
9. Stir before serving with fish, poultry or pork dishes.
