Coffee Angel Squares

Ingredients:
1(4-serving) envelope low calorie non-instant vanilla pudding mix
2 tablespoons sugar free Swiss style instant coffee crystals
1 1/2 cups skim milk
2 packets(4 tsp sugar) low calorie powdered sweetener
1 cup plain low fat yogurt
5 cups(1/2 of a 9-inch cake) 1/2 inch angel food cake cubes
 
1. In a 1 1/2 quart bowl, combine pudding mix and instant coffee crystals, mix well.
2. Gradually whick in milk until mixture is smooth.
3. Microwave, uncovered, on HIGH for 2:30.
4. Whisk well.
5. Microwave, on HIGH for 2:30 or until mixture comes to a full boil, whisking twice.
6. Stir in powered sweetener.
7. Refrigerate for only one hour.
8. Fold in yogurt.
9. Place cake cubes in a large bowl.
10. Pour pudding mixture over cake cubes.
11. Stir gently to coat cake cubes.
12. Spread evenly in a 10" x 6" baking dish.
12. Cover and refrigerate eight hours or until set, or as long as overnight.
13. Cut into squares and serve.
