Smoky Orange Roughy

Servings: 4

Ingredients:
1 medium(1 cup) chopped tomato
2 oz(1/4 cup) smoked salmon, flaked
2 tablespoons snipped parsley
2 teaspoons snipped chives
1/2 teaspoon dried leaf chervil
4(5 oz) orange roughy fillets, 1/4-1/2 inch thick
4 slices Lemon Butter Log

1. In a small bowl, gently toss together tomato, smoked salmon, parsley, chives and chervil.
2. Arrange fillets flat in a 12" x 7" baking dish.
3. Cover with vented plastic wrap
4. Microwave on HIGH for 5:00, giving dish a half turn once.
5. Spoon tomato mixture atop the fillets.
6. Cover with vented plastic wrap.
7. Microwave on HIGH for 1:00-2:00 or until center of fish flakes when tested with a fork.
8. Serve fillets topped with a slice of Lemon Butter Log.
