Glazed Beets

Ingredients:
2(16 oz) cans whole tiny beets, drained
2 tablespoons packed brown sugar
2 teaspoons cornstarch
2/3 cup cranberry juice cocktail
2 tablespoons white vinegar
1 teaspoon prepared horseradish
1/4 cup cranberry orange relish
 
1. Place beets in a 2 quart casserole dish, set aside.
2. In a 2 cup glass measuring cup, mix brown sugar, and cornstarch until well combined.
3. Stir in cranberry juice cocktail, vinegar and horseradish.
4. Microwave on HIGH for 2:00-2:30 or until mixture thickens and bubbles, stirring twice.
5. Stir in cranberry orange relish.
6. Gently mix sauce into beets.
7. Cover and microwave on HIGH for 7:00 or until heated through.
