Ingredients:
1 cup uncooked Minute rice
1/2 cup chopped carrot
1/4 cup raisins
1/4 cup chopped onion
1/2 teaspoon ground cinnamon
2(1 lb after boning) whole chicken breasts, skinned, boned, split lengthwise
1 cup water
1/2 teaspoon sugar-free orange breakfast drink crystals
4 orange slices
1. In a small bowl, combine rice, carrot, raisins, onion and cinnamon.
2. Mix well.
3. Place 1 chicken piece in center of each or four 2 cup casseroles.
4. Spoon 1/2 cup rice mixture around each chicken piece.
5. In a measuring cup, combine water and orange drink crystals.
6. Pour 1/2 cup juice mixture over rive in each casserole.
7. Top each casserole with one orange slice
8. Cover anf microwave on HIGH for 13:00-15:00 or until chicken and rice are tender.
9. Rearrange casseroles once during cooking.
10. Let stand, covered 2:00.
