Sunny Side Omelet Filling

Servings: 2/3 cup
 
Ingredients:
2 teaspoons butter or margarine
1/2 cup chopped zucchini
2 tablespoons shredded carrot
2 tablespoons chopped green onion
1/4 teaspoon dried leaf basil
6 cherry tomatoes, halved
2 teaspoons sunflower kernels
 
1. In a 1 quart casserole dish, combine butter or margarine, zucchini, carrot, green onion and basil.
2. Microwave, uncovered, on HIGH for 2:30-3:00 or until vegetables are tendet, stirring once.
3. Add tomatoes.
4. Microwave on HIGH for 0:45-1:00 or until heated through.
5. Stir in sunflower kernels.
6. Reserve 1 to 2 tablespoons mixture for topping each omelet; user remaining mixture as filling for French Omelet.
