Servings: 4(8 meatballs)
Ingredients:
1 pound lean ground beef
1/4 cup quick-cooking oats
1/4 cup skim milk
2 teaspoons instant minced onion
1 teaspoon dried leaf basil
1 cup chopped celery
1 cup chopped carrot
1 cup frozen whole kern corn
1/2 cup water
1 cup tomato sauce with no salt added
1 teaspoon chili powder
1. In a medium bowl, thoroughly mixed meat, oats, milk, onion, and basil.
2. Shape into 8 meatballs.
3. Place in a baking 12" x 7" baking dish.
4. Cover with vented plastic wrap and microwave on HIGH for 6:00 or until meat is done, giving the dish a half turn once.
5. Drain.
6. In a 2 quart casserole dish combine celery, carrot, frozen corn and water.
7. Cover and microwave on HIGH for 6:00-7:00 or until tender, stirring once
8. Do not drain.
9. Stir in tomato sauce and chili powder.
10. Gently fold in meatballs
11. Cover and microwave on HIGH for 3:00-5:00.
