Vegetarian Pita Sandwiches

Ingredients:
1/2 cup alfalfa sprouts
1/2 cup shredded carrot
1/2 cup chopped zucchini or cucumber
1/4 cup sunflower kernels
2 tablespoons creamy onion salad dressing
4 Cheddar cheese slices
2 pita bread, about 6 inches in diameter, halved crosswise
4 brick cheese slices
 
1. In a small bowl, combine alfalfa sprouts, carrot, zucchini or cucumber, sunflower kernels, and onion dressing.
2. Mix well.
3. Place Cheddar cheese slices inside pita bread pockets, resting on flatter side of pocket.
4. Top with sprout mixture, then brick cheese slice.
5. Place sandwiches on a paper towel lined plate.
6. Microwave on HIGH for 1:45-2:00 or until cheese begins to melt.
