Poached Turkey Giblets

Servings: from one turkey
 
Ingredients:
8 oz giblets from 1(6-7 lb) turkey including neck
1 stalk celery, cut up
1 medium carrot, cut up
1 small onion, cut up
2 sprigs fresh parsley
about 1 1/2 cups water or chicken broth
 
  1. Remove skin from necks.
  2. Slash giblets thoroughly on each side with a sharp knife.
  3. Set live aside.
  4. Place neck, heart and gizzard in a 1 quart casserole.
  5. Add celery, carrot, onion and parsley.
  6. Add water or broth to cover.
  7. Cover and microwave on HIGH for 7:00-8:00 or until boiling.
  8. Stir and cover.
  9. Microwave on MEDIUM LOW for 60:00 or until tender.
10. Add liver during last minutes of cooking time.
11. Chop and add to stuffing or gravy.
