Feta Bean Casserole

Ingredients:
2(15 oz) cans red beans, drained, rinsed
1 cup chopped tomatoes
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup chopped zucchini
1/4 cup sliced ripe olives
1 teaspoon dried leaf basil
1 teaspoon dired leaf oregano
1/2 teaspoon coarsley ground pepper
1 cup(5 oz) crumbled feta cheese
1/4 snipped parsley
 
1. In a 2 quart casserole dish, combine beans, tomato, green pepper, onion, zucchini, olives, basil, oregano and pepper.
2. Mix well.
3. Cover and microwave on HIGH for 6:00-7:00 or until hot, stirring once.
4. Drain.
5. Fold in feta cheese and parsley.
6. Cover and microwave on HIGH for 1:00 or until warmed through.
