Sherried Prunes

Servings: 2 1/2 cups
 
Ingredients:
2 cups(12 oz) pitted dried prunes
1/4 cup raisins
1/2 lemon, thinly sliced
3/4 cup cream sherry
3/4 cup apple juice
 
1. Combine prunes and raisins in a 1 quart jar.
2. Halve lemon slices, add to fruit and mix gently.
3. In a 2 cup glass measuring cup, combine sherry and apple juice.
4. Microwave on HIGH for 2:30-3:00
5. Pour over fruit.
6. Cover jar and shake.
7. Let stand overnight.
8. Store in the refrigerator up to one month.
9. Remove lemon slices before serving prunes as a meat accompaniment, relish or fruit salad.
