Raspberry Cream Cups

Servings: 6

Ingredients:
1 cup peach yogurt
Pastry Cream
Raspberry Glaze
fresh raspberies
mint sprigs

1. Gently whisk peach yogurt into cooled or chilled Pasty Cream.
2. Reserve 1 tablesppon yogurt mixture for each serving.
3. Spoon about 1/2 cup yogurt mixture into 8(10-ounce) wine glasses.
4. Smooth the tops.
5. Cover and refrigerate.
6. Up to two hours before serving, spoon Raspberry Glaze over cream layer in glasses.
7. Tilt glasses to coat cream evenly with glaze.
8. Refrigerate until serving time.
9. Garnish with dollops of reserved yogurt mixture, fresh raspberries and mint sprigs.
