Low Cholesterol Quiche

Ingredients:
9 inch unpricked baked oil pastry shell
1 tablespoon margarine
1/4 cup chopped onion
1/4 cup chopped green pepper
1 1/2 cups(6 oz) shredded pasteurized process filled cheese food made with corn oil
1/4 cup imitation bacon bits
1 cup canned, skimmed evaporated milk
3/4 cup frozen egg substitute, thawed
 
  1. Prepare oil apstry shell in a 9 inch pie plate and set aside.
  2. In a 2 cup bowl, combine margarine, onion and green pepper.
  3. Microwave on HIGH 2:00-3:00 or until vegetables are tender, stirring once.
  4. Drain.
  5. Sprinkle half the cheese in baked pastry shell.
  6. Layer drained begetables and bacon bits over cheese in pastry shell.
  7. Sprinkle with remaining cheese.
  8. In a small bowl, combine evaporated milk and egg substitute; mix well.
  9. Pour over cheese in pastry shell.
10. Microwave on MEDIUM for 17:00-20:00 or until set, giving the dish a quarter turn twice.
11. Do not rely on testing for doneness with a knife becausee the consistency of the cheese will prevent the knife from coming out clean.
12. Let stand 10:00.
